Ingredients for making coconut milk pancakes

1 egg1/2 cup milk2 tablespoons butter (melted)1/3 cup flour

Steps to make coconut milk pancakes

This recipe uses shredded coconut and homemade roasted coconut. To toast the coconut, just put it in a stainless steel pots and pans and slowly brown it over a low heat. You can also use coconut extract-coconut tastes very good and is actually made from real coconut. As a basis, start with this basic simple pancake recipe.

 

1. Before starting, heat a cast iron skillet or safe nonstick cookware over medium heat. Make sure it is nice and hot, then lower the temperature before you start cooking the pancakes. Stainless steel stackable cookware, stainless steel pots and pans or die cast aluminum cookware are all good choices.

 

2. Stir the eggs, milk and melted butter together. Add vanilla and coconut extracts and shredded coconut. Whisk the flour, baking powder and salt in a separate bowl. Slowly whisk the egg and milk mixture. It doesn't matter if the batter is a bit lumpy; be careful not to overmix. Let it sit for about 5 minutes. The batter will swell. If it is too thick, add a little more milk.

3. Grease the bakeware. Spoon the batter into about 1/4 cup of the baking sheet and cook for a few minutes on each side. Keep the pancakes warm in an oven at 200 degrees Fahrenheit. Stir together the whole milk, powdered sugar, vanilla extract and coconut extract. Drizzle the glaze on the pancakes, then put the toasted coconut on top. These pancakes are paired with berries or bananas, sprinkled with powdered sugar or classic dishes: butter and maple syrup taste great.

 

4. If you have trouble turning the pancakes. what to do? Don't worry, first of all, make sure your pan is not too hot. Any pancake needs to be low to medium low to cook properly.
